| This makes a great, spur-of-the-moment snack. It is very quick to make and the ingredients can be easily substituted for whatever is available in your fridge and pantry. |

| Ingredients |

2 large eggs
|
|
1 tbsp milk
|
|
salt and pepper to taste
|
|
2 tsp butter
|
|
50 g ham, chopped
|
|
1/2 ripe tomato, chopped
|
|
1/4 cup grated cheese |

| Method |
Whisk the eggs, milk, salt and pepper in a small bowl. Melt butter in a small frying pan over medium heat till it foams. Add the egg mixture to the pan. As the outside of the omelette starts to cook, use a fork to draw the egg mixture to the centre, allowing the uncooked egg to slide to the outer edge of the pan. Continue to cook for about 30 seconds till golden brown underneath and still a bit soft on the top. Sprinkle the omelette with ham, tomato and cheese.
Remove from the heat and fold one side of the omelette over the other to enclose the filling. Slide onto a plate and serve immediately. |
