Rosewater Rice Pudding

A hint of exotica due to the flavour and aroma infused by rosewater, this is a very interesting choice for dessert. It can be enjoyed warm or chilled. It is very child-friendly too.
 
Prep & Cooking Time: 1 hr 30 mins
Serves 4
  Vegetarian
Ingredients
   800 ml milk
   1/2 cup caster sugar
   1/2 cup calrose/short grain rice
   1 tbsp rosewater
   slivered pistachios to serve
Method



Combine milk, 200 ml water and sugar in a heavy-based saucepan and bring almost to boil. Add rice and stir continuously till mixture comes to a boil. Reduce heat and simmer for approximately 40 minutes, stirring occasionally till creamy and rice is softened. Add more milk if too thick.

Remove from heat, stir in rosewater and pour into a bowl. Garnish with slivered pistachios. Serve warm or chilled.

  • I personally prefer it chilled as it is akin to having an exotic-flavoured ice-cream.
