Rajma Bake

'Rajma' is the Indian term for Red Kidney Beans. The Rajma Curry' is a very popular North Indian dish and a favourite at our house as well. The soaking and softening of the beans takes a considerable amount of time. You can use store bought cans of red kidney beans for a quicker alternative. Here is a western take on the traditional 'Rajma Chawal'.
 
Preparation Time: 10 mins
Prep & Cooking Time: 45 mins
Serves 3
  Vegetarian  From My Recipe Book
Ingredients
   2 cups pre-cooked rajma [red-kidney beans]
   1 large onion, finely chopped
   2 tomatoes, diced
   2 red chillies, finely chopped
   1 tsp garlic paste
   1 tsp ginger paste
   1 cup basmati rice
   1/2 cup milk
   1 cup water
   1 tbsp sugar
   1/2 tsp turmeric powder
   2 tsp garam masala
   salt to taste
   1/2 tsp cinnamon powder
   3 bay leaves
   olive oil to drizzle
Method



Preheat oven to 200oC. In a deep casserole dish combine onions, tomatoes, green chillies, bay leaves, ginger and garlic pastes, rice and all the spices. Sprinkle the seasonings and mix well. Layer the rajma [red-kidney beans]on top. Add the milk and water. Drizzle some olive oil. Cover the casserole dish with a lid and bake at 200oC for 40 minutes.

Serving suggestions
  • Garnish with freshly chopped mint and coriander leaves and serve hot with yoghurt.
