| Lapsi or 'Fada Lapsi' as it is called in Western India, is known as 'Dalia'[Daliya] to me ever since I was a kid. It is essentially a porridge made of bulgar wheat and jaggery to mark auspicious ocassions in the Gujarati Community. Try giving this to your kids with cold milk instead of cereal for breakfast for a change. |

| Ingredients |

1 cup bulgar wheat
|
|
3 cups water
|
|
1 cup jaggery
|
|
1 tbsp ghee or butter |
|
|
| Method | | Heat ghee/butter in wide pan. Saute the bulgar wheat on a low flame for 20 mins, turning constantly to avoid burning. Bring water and jaggery to a boil in a saucepan till blended. Add the liquid to the roasted bulgar wheat and stir well. Cover and let simmer on low heat for 20 minutes till all the liquid is dried up and the bulgar wheat has become soft and fluffy. |
