| Ingredients |

900 g cucumbers cut into slices
|
|
2 onions thinly sliced
|
|
50 g salt
|
|
350 ml cider vinegar
|
|
350 g granulated sugar
|
|
2 tbsp white mustard seeds
|
|
2 tsp celery seeds
|
|
1/2 tsp ground turmeric
|
|
1/2 tsp black peppercorns |

| Method | | Put the cucumbers and onions in a large bowl. Add the salt and mix well. Fit a plate inside the bowl, pressing down on the cucumber mixture. Add a weight to further compress the vegetables and leave for 3 hours. Drain the accumulated liquid, rinse under cold water and drain again. Put the vinegar, sugar, mustard seeds, celery seeds, ground turmeric and peppercorns in a large saucepan. Bring to a boil, stirring to dissolve the sugar completely. Add the drained vegetables. As soon as the mixture comes to a boil again, remove from heat. Spoon the pickle into warm sterilized pickling jars, making sure the vegetables are covered with the liquid. Cover with airtight, vinegar-proof lids and store for at least 1 month before using. |
