| Ingredients |

1 can chickpeas, rinsed and drained
|
|
4 spring onions, sliced
|
|
2 garlic cloves, chopped fine
|
|
1 egg
|
|
1/2 cup coriander leaves, chopped
|
|
salt to taste
|
|
small lettuce leaves to serve |

| Method |
Heat 2 teaspoons of oil in a large pan over medium heat. Add garlic and spring onions. Saute for 2 minutes stirring until spring onions soften. Put the chickpeas and spring onion mixture in a processor and process until the mixture starts to hold together. Transfer to a bowl and mix in an egg alongwith the coriander leaves and salt. Shape the mixture into 6 even fritters.
Heat remaining oil in a frying-pan over medium heat. Shallow-fry the chickpea fritters in batches of 3 for about 2 minutes on each sides, until golden. |
