Homemade Hash Browns

These hash browns are great for breakfast or brunch and so easy that even the kids can make them.
 
Prep & Cooking Time: 25 mins
Serves 4
  Vegetarian  From My Recipe Book
Ingredients
   4 large sebago potatoes
   2 tbsp olive oil
   60 g butter
Method
Wash, peel and grate the potatoes. Using your hands, squeeze as much liquid as possible from the potato. Discard liquid. Transfer potato to a large bowl. Season as desired and stir well. Heat 1/3 of butter and 1 tablespoon oil in a non-stick frying pan over medium heat until foaming. Spoon 1/3 cupfuls of mixture into the pan. Flatten with a spoon. Cook for 5 minutes on each side, until golden. Repeat with remaining mixture adding butter and oil as required.
Serving suggestions
  • Serve hot with grilled mushrooms and tomatoes.
