Spinach And Asparagus Salad

A lovely crunchy accompaniment to a light pasta meal.
 
Preparation Time: 10 mins
Serves 4
  Vegetarian
Ingredients
   1 bunch asparagus, woody ends trimmed
   1 bunch english spinach, washed and coarsely chopped
   1 punnet cherry tomatoes, halved
   2 tbsp olive oil
   1 tbsp red wine vinegar
   1 garlic clove, crushed
   dash of caster sugar
   salt to taste
   freshly ground black pepper
Method

Cook the asparagus in a medium saucepan of boiling water for 3-4 minutes until bright green, tender and crisp. Refresh under cold water and drain. In a bowl, whisk together the oil, vinegar, garlic and sugar until combined. Season with salt and pepper. Place asparagus, tomatoes and spinach in a serving bowl and drizzle with the dressing. Toss well. Serve immediately.
