| A lovely crunchy accompaniment to a light pasta meal. |

| Ingredients |
|
1 bunch asparagus, woody ends trimmed
|
|
1 bunch english spinach, washed and coarsely chopped
|
|
1 punnet cherry tomatoes, halved
|
|
2 tbsp olive oil
|
|
1 tbsp red wine vinegar
|
|
1 garlic clove, crushed
|
|
dash of caster sugar
|
|
salt to taste
|
|
freshly ground black pepper |

| Method | Cook the asparagus in a medium saucepan of boiling water for 3-4 minutes until bright green, tender and crisp. Refresh under cold water and drain. In a bowl, whisk together the oil, vinegar, garlic and sugar until combined. Season with salt and pepper. Place asparagus, tomatoes and spinach in a serving bowl and drizzle with the dressing. Toss well. Serve immediately. |
