Pumpkin & Red Pepper Soup

This is a clever variation to the traditional pumpkin soup and adds a smokey flavourful bite to the taste. I have used olive oil instead of butter which makes this soup healthier.
 
Preparation Time: 10 mins
Cooking Time: 35 mins
Serves 4
  Vegetarian  From My Recipe Book
Ingredients
   2 cups pumpkin, cubed
   2 large potatoes, cubed
   1 brown onion, chopped
   1/2 cup red bell pepper, diced
   1 litre chicken stock
   1 tbsp cream
   1 tsp sugar
   freshly ground black pepper
   olive oil
Method
Heat olive oil in a large saucepan and saute the onions till soft. Add pumpkin, potatoes and red pepper. Cook for 5-10 minutes. Add chicken stock and seasonings. Stir well and cook for 25 minutes till tender. Blend the soup with a stick blender. Add cream and cook for 5 minutes on low heat. Serve hot.
Serving suggestions
  • Serve hot with a slice of toasted sourdough or garlic bread.
  • Sprinkle some chives and mini croutons on the soup and serve with a dollop of sour cream.
