| Pumpkin & Red Pepper Soup |

| This is a clever variation to the traditional pumpkin soup and adds a smokey flavourful bite to the taste. I have used olive oil instead of butter which makes this soup healthier. |

| Ingredients |
|
2 cups pumpkin, cubed
|
|
2 large potatoes, cubed
|
|
1 brown onion, chopped
|
|
1/2 cup red bell pepper, diced
|
|
1 litre chicken stock
|
|
1 tbsp cream
|
|
1 tsp sugar
|
|
freshly ground black pepper
|
|
olive oil |

| Method | | Heat olive oil in a large saucepan and saute the onions till soft. Add pumpkin, potatoes and red pepper. Cook for 5-10 minutes. Add chicken stock and seasonings. Stir well and cook for 25 minutes till tender. Blend the soup with a stick blender. Add cream and cook for 5 minutes on low heat. Serve hot. |

| Sprinkle some chives and mini croutons on the soup and serve with a dollop of sour cream. |
