| Quick Fennel And Orange Salad |

| I bought some gorgeous fennel at our local gourmet market today and had to try something out for lunch which was quick and easy. The salad was ideal as it was accompanying the tomato and bread soup I had made earlier. It was light, crunchy and very refreshing. Try It! |

| Ingredients |
|
1 medium sized fennel
|
|
2 navel oranges
|
|
1 cup lettuce leaves
|
|
1 tbsp white wine vinegar
|
|
1 tbsp olive oil
|
|
1 tsp coarsely chopped rosemary
|
|
freshly grounded black pepper |

| Method | Juice one of the oranges in a bowl. Add olive oil, white wine vinegar, rosemary & black pepper. Set aside. Trim the fennel, discard the core and slice into narrow slivers. Toss the cut fennel in the dressing bowl with the dressing. Mix it well, cover and chill in the refrigerator for 10 minutes. Cut the other orange into narrow slices and tear the lettuce leaves. Take the fennel out of the refrigerator and combine with the orange and lettuce. Toss well and serve immediately. |
