| Pine Nut & Mint Couscous |

| I couldn't believe how fast this was to make and tasted like a million bucks. Goes great with any kind of candied, chargrilled or braised chicken dish. |

| Ingredients |

2 cups couscous
|
|
1/3 cup toasted pine nuts
|
|
1/4 cup, chopped parsley
|
|
1/4 cup, chopped mint
|
|
1 tbsp olive oil |

| Method | | Place oil and 2 cups water in a saucepan. Bring to boil on medium heat. Reduce heat to low. Stir in couscous gently with a fork, until the water is absorbed. Use the fork to separate the grains and fluff the couscous. Set aside. Fold in nuts, parsley and mint. Season to taste and serve as an accompaniment to meat. |
