Pear & Ginger Oat Crumble

High Protein & Energy Packed Breakfast or Guilt-Free, Low Fat, Super-Healthy Dessert? You decide!!
 
Preparation Time: 20 mins
Cooking Time: 30 mins
Serves 6
  Vegetarian
Ingredients
   4 pears, peeled, cored and diced
   1 1/2 tbsp candied ginger/ginger in syrup
   1 cup rolled oats
   1/2 cup unprocessed oat bran
   1/2 cup brown sugar
   1 tbsp caster sugar
   50 g butter, cubed
   ice cream or yoghurt to serve
Method



Preheat oven to 220oC. Combine pear,ginger,caster sugar and 1/2 cup water in a saucepan. Heat on low for 5 minutes, until sugar dissolves. Increase heat to medium and cook for anohter 5 minutes. Divide pear mixture between 6 small ovenproof ramekins or cups.

Combine remaining ingredients in a food processor. Process until mixture resembles breadcrumbs. Sprinkle this oat mixture over pears. Bake for 20 minutes until top is golden.

Serving suggestions
  • Serve topped with ice cream or yoghurt.
