Simple Lasagna

Take a little time out one weekend and invest it in fresh pasta dough. The lasagna you make from that will be out of this world, I promise.
 
Preparation Time: 20 mins
Cooking Time: 1 hour 10 mins
Serves 6
  Beef
Ingredients
For The Pasta
   1 quantity fresh pasta dough
   1 1/2 cups grated mozzarella cheese
For The Meat Sauce
   500g beef mince
   2 cans diced tomato
   2 tbsp tomato paste
   1 tbsp basil, chopped
   1 garlic clove, crushed
   1 tbsp olive oil
For The Cheese Filling
   3 cups ricotta cheese
   2 eggs, lightly beaten
   1/2 cup parmesan cheese, grated
   1 tbsp parsley, chopped
To Make Lasagna Sheets
Roll out pasta to 2 or 3mm thick sheets and cut into 7X11cm rectangles. Set lasagna sheets aside.
To Make Meat Sauce
To make meat sauce, heat oil in a large frying pan on high. Add mince and garlic. Cook for 8-10 minutes, stirring often, until browned. Add remaining ingredients and season to taste. Reduce heat to low and partially cover. Simmer for 30 minutes, stirring occasionally until sauce thickens slightly.
To Make Cheese Filling
To make the cheese filling, combine all ingredients in a bowl, mix well, season and set aside.


Preheat oven to 180oC. Lightly grease a 33cmX23cmX5cm ovenproof dish. Cook lasagna sheets in batches in a large saucepan of boiling,salted water for 4 minutes. Drain and spread on a clean tea-towel. Cover base of dish with one layer of lasagna sheets. Top with half of cheese filling, one third of mozzarella and on third of meat sauce. Repeat layers, finishing with a layer of meat sauce topped with mozzarella. Bake for 30 minutes.

Serving suggestions
  • Stand for 10 minutes before serving.

  • If you wish to store your homemade pasta, make sure it is completely dry before storing to prevent moldiness.
