Potato & Broccoli Soup

This is a wonderfully nutritious recipe for active toddlers and kids ... it has carbohydrates to fuel their endless energy and iron [in the form of the dreaded broccoli which they otherwise won't eat!!] .. what more could a mum want?
 
Preparation Time: 10 mins
Cooking Time: 20 mins
Serves 4
  Vegetarian  From My Recipe Book
Ingredients
   400g potatoes, peeled and coarsely chopped
   1 cup broccoli florets
   1 onion, chopped
   1 1/2 cups chicken stock
   1/2 cup milk
   1 tbsp olive oil
   1 1/2 cups water
Method



Heat oil in a large saucepan on medium heat. Saute onion for 2 minutes until soft. Add the chicken stock, water and potatoes. Bring to boil and simmer for 10 minutes. Add broccoli and cook for another 5 minutes. Cool slightly. Blend until smooth. Stir in milk and season to taste.

Serving suggestions
  • Serve with homemade toast sticks, so the kids can dip ans scoop the soup.
