| This is a traditional Turkish after dinner treat ... a healthy dessert idea that brings together beautifully the sweet and tart flavours of pumpkin and walnut. |

| Ingredients |

3kg pumpkin [kent or jap], peeled and cut into 1cm pieces
|
|
1 cup caster sugar
|
|
2/3 cup coarsely chopped walnuts |
|
|
| Method | | Place pumpkin in a deep, flameproof baking dish. Cover with sugar. Cook on high for 2-3 minutes, until sugar starts to melt and caramelise. Reduce heat to low, cover dish with foil and cook for another 10 minutes. Preheat oven to 180oC. Remove foil and bake pumpkin for 20 minutes. Transfer to a serving plate to cool. Sprinkle with walnuts and serve. |
