Palak Paratha [Indian Spinach Bread]

This is also referred to as 'Palak Roti' and is extremely nutritious. Great for lunch boxes and even greater for picnics, this rustic bread can be used as a wrap with delicious chicken or vegetarian filling for a very satisfying meal.
 
Preparation Time: 10 mins
Cooking Time: 20 mins
Makes 6 pieces
  Vegetarian  From My Recipe Book
Ingredients
   1 cup chopped and blanched spinach leaves
   1 1/2 cups wheat flour
   1 tsp cumin seeds
   2 tsps cumin powder
   salt to taste [approx 1 tsp]
   1 tsp oil
   ghee
Method



Combine oil, salt, cumin seeds, cumin powder, flour and spinach in a huge bowl. Add enough water to make a tight dough. Divide the dough into 6 equal portions. Roll each portion into a ball and flatten with your palms to form a disc. Dust your work surface with flour and roll each disc into a 6 inch wide circle to form your paratha .

Heat a griddle [ tawa ] or a pancake pan and toast the paratha s on each side till cooked and evenly browned. Remove from the pan and brush one side of the paratha with ghee or butter.

Serving suggestions
  • Serve hot with curry, raita or chutney.
  • Alternatively break the cooked paratha into pieces and serve with a dip of your choice.
