Crunchy Caramel Chocolate Slice

It is always nice to have a couple of these handy in your fridge or pantry. Unexpected guests will love this little sweet treat.
 
Preparation Time: 10 mins
Cooking Time: 10 mins
Chilling Time: 1 hour
Makes 24 pieces
  Vegetarian
Ingredients
   4 cups rice bubbles
   200g chocolate melts [nestle]
   1 can sweetened condensed milk
   1 cup unsalted, roasted peanuts, coarsely chopped
   2 tbsp golden syrup
   40g butter
   melted butter to grease
Method



Grease a 20X30cm slice pan. Line the base and sides with non-stick baking paper, allowing the sides to overhang. Combine rice bubbles and peanuts in a heatproof bowl. Place condensed milk, golden syrup and butter in a saucepan over medium heat. Cook, stirring constantly with a wooden spoon until the mixture is golden. Remove from heat and pour over the rice bubbles mixture. Mix well. Spoon the mixture into the prepared pan. Smooth the surface with the back of the spoon. Cover with plastic wrap and place in the fridge for 1 hour to set. Turn onto a clean surface and cut into 3cm square slices.

Place the chocolate melts in a heatproof bowl over a saucepan of simmering water. Stir with a metal spoon until melted. Spoon mixture into a small plastic bag. Cut a small hole in one corner and seal the others. Drizzle chocolate over the slices.
