| Homemade Prawn Crackers |

| This is a simple to make, homemade version of the prawn crackers yyou can't seem to get enough of at your local Chinese Take-Away place. Althugh they take only 2 minutes to fry, the actual drying in the sun process takes several days. |

| Ingredients |

200g shrimp
|
|
200g arrowroot
|
|
salt to taste
|
|
water to make dough |
|

| Method |
Mash and Puree the shrimps. Add salt, arrowroot and water. Mix and knead to form a stiff dough. Shape the dough into a 3 inch diameter sausage roll. Steam the dough on high heat till it hardens. Remove from heat and cool.
Slice the steamed dough into thin circles. Dry in the sun till they are completely dry and hard. Store in an air-tight container. Deep fry in hot oil whenever required. |
