| Chicken Rice Noodles |

| These are great for supper and make a light but satisfying meal. When I was living in Singapore, bowls of these very delicious noodles were served up at 5:00pm around local eateries and people enjoyed them over iced tea and some gossip. |

| Ingredients |
|
250g rice noodles
|
|
1 onion, slivered
|
|
1 carrot, slivered
|
|
1 capsicum, slivered
|
|
1/4 cup green peas
|
|
1 cup chicken, shredded
|
|
1 tbsp spring onions, finely chopped
|
|
1 tbsp soy sauce
|
|
2 tsps vinegar
|
|
salt to taste
|
|
freshly ground black pepper
|
|
a pinch of msg [ajinomoto] |

| Method |
Soak the noodles in plain water till they become soft. Drain, rinse with a few drops of oil and set aside.
Heat a little oil in a wok. Add onions and carrots. Stiry-Fry for a minute. Add chicken. Stir-Fry until cooked. Add rice noodles, soy sauce and vinegar. Stir briskly till all ingredients are mixed well and coated with the soy sauce. Addd salt, pepper and MSG. Mix well and remove from heat.
Sprinkle with spring onions and serve hot. |
