Chicken With Vegetables

This recipe calls for 'bamboo shoots' which might be difficult to acquire. I have seen local Asian supermarkets store them, but they can be substituted with slivered young ginger for a similar effect and stronger taste.
 
Prep & Cooking Time: 15 mins
Serves 2
  Chicken
Ingredients
   200g chicken, diced
   2 onions, roughly chopped
   1 carrot, chopped
   1 capsicum, chopped
   4 baby corns, halved
   1/2 cup bamboo shoots, finely chopped
   1 cup chicken stock
   1 tbsp cornflour mixed with 3 tbsps water
   salt to taste
   a pinch of msg [ajinomoto]
   3 tbsp oil
Method



Heat oil in a wok. Stir-fry the chicken for 2 minutes on high heat. Add all the vegetables and stir-fry for another 2 minutes. Add stock, salt, MSG and cornflour paste. Stir and cook for another minute or two till it thickens.

Serving suggestions
  • Serve hot garnished with chopped chives, spring onions and coriander.
