| This recipe calls for 'bamboo shoots' which might be difficult to acquire. I have seen local Asian supermarkets store them, but they can be substituted with slivered young ginger for a similar effect and stronger taste. |

| Ingredients |

200g chicken, diced
|
|
2 onions, roughly chopped
|
|
1 carrot, chopped
|
|
1 capsicum, chopped
|
|
4 baby corns, halved
|
|
1/2 cup bamboo shoots, finely chopped
|
|
1 cup chicken stock
|
|
1 tbsp cornflour mixed with 3 tbsps water
|
|
salt to taste
|
|
a pinch of msg [ajinomoto]
|
|
3 tbsp oil |

| Method |
Heat oil in a wok. Stir-fry the chicken for 2 minutes on high heat. Add all the vegetables and stir-fry for another 2 minutes. Add stock, salt, MSG and cornflour paste. Stir and cook for another minute or two till it thickens.
