Dinosaur Pasties

It is the imaginative shape of this quick and handy snack, that makes it look like chubby dinosaurs. Draw eyes with a food colouring pen or stick in peas and you have your very own little T-Rex snack.
 
Preparation Time: 30 mins
Standing Time: 20 mins
Cooking Time: 40 mins
Makes 24 pieces
  Chicken
Ingredients
   350g chicken mince
   1 small carrot, peeled and coarsely grated
   1 small swede, ends trimmed, peeled, coarsely grated
   1 small brown onion, halved, finely chopped
   120g frozen peas, thawed
   1/2 cup chicken/vegetable stock
   2 tbsp tomato paste
   1 tbsp olive oil
   6 sheets frozen shortcrust pastry, thawed [25x25cm]
   1 egg, lightly whisked
   tomato ketchup to serve
Method



Preheat oven to 200oC. Large 3 large baking trays with non-stick baking paper. Heat oil in a large frying pan over medium heat. Add onion and cook until soft. Increase heat a bit, add chicken mince and cook, stirring with a wooden spoon for 5 minutes till the mince changes colour. Add carrot and swede. Cook for another 2 minutes until heated through. Reduce heat to medium. Add stock, tomato paste and peas. Cook for about 7-8 minutes until all the liquid evaporates. Set aside for 20 minutes to cool.

Place pastry on a clean, floured work surface. Use a 12cm-diamter pastry cutter to cut four discs from each pastry sheet. Place 2 tablespoonfuls of chicken mixture in the centre of each disc. Lightly brush edges of pastry with a little water. bring two sides up to the centre to enclose the filling. Press the edges together to seal, then crimp to make a wavy edge. Place sealed side up on the lined trays.

Brush pasties with egg and bake for 20 minutes until golden brown.

Serving suggestions
  • Serve with tomato ketchup.
