Spinach Torte

I came across this recipe while reading about the history of the world famous Arnott's biscuits. This is a very interesting recipe because it uses one of their most popular 'SAO' biscuits to conjure up a lovely, savoury torte.
 
Preparation Time: 30 mins
Cooking Time: 55 mins
Chilling Time: 20 mins
Serves 8
  Vegetarian
Ingredients
   2 cups spinach leaves, washed and finely chopped
   125g arnott's sao biscuits, coarsely broken
   500g cream cheese at room temperature
   250g natural yoghurt
   4 eggs
   1/2 cup finelt grated parmesan
   60g butter, melted
   4 green shallots, thinly sliced
   melted butter to grease
   pinch of nutmeg
Method



Preheat oven to 180oC. Brush a 22cm round springform pan with melted butter to lightly grease. Process biscuits in a food processor until they resemble coarse breadcrumbs. Add butter and parmesan cheese. Process until combined. Press the mixture into the base of the prepared pan. Cover with plastic wrap and place in the fridge for 15-20 minutes to chill.

Process the cream cheese, yoghurt, eggs and nutmeg in a food processor until smooth and creamy. Season with salt and pepper. Transfer to a bowl. Add the green shallots and spinach. Mix well.

Pour the spinach mixture over the biscuit basr. Bake in the oven for about 55 minutes until set and golden brown. Set aside for 10 minutes to cool. Cut into wedges and serve warm or cold.
