| This is a wonderful accompaniment to any Asian inpsired meat dish. It goes especially well with sauce-based dishes. A plateful of this salad should take care of 1/3 of your daily vegetable requirement. |

| Ingredients |

200g thin rice noodles
|
|
1 carrot, peeled, cut into matchsticks
|
|
1 cucumber, deseeded, thinly sliced
|
|
1 small red onion, halved, thinly sliced
|
|
1 red capsisum, halved, thinly sliced
|
|
1/4 cup fresh mint, coarsely chopped
|
|
1/4 cup coriander leaves, coarsely chopped
|
|
1/4 cup thai basil leaves, coarsely chopped
|
|
1/4 cup sweet chilli sauce |

| Method | | Place the rice noodles in a large heatproof bowl and cover with boiling water. Set aside for 5 minutes to soften. Rinse under cold running water. Drain and return to the bowl. Add all the other ingredients. Gently toss until just combined. Serve immediately. |
