| The broccoli and celeriac in this soup are both sources of dietary fibre which is important to prevent constipation and bowel cancer. This is a very soothing soup and high in calcium, making it ideal for days when you need that extra boost. |

| Ingredients |

600g broccoli, cut into small florets
|
|
300g celeriac, peeled and finely chopped
|
|
1 brown onion, coarsely chopped
|
|
1 large garlic clove, finely chopped
|
|
2 cups vegetable stock
|
|
3 cups low-fat milk
|
|
1 tbsp extra virgin olive oil
|
|
1 tsp caraway seeds
|
|
1 tbsp parmesan cheese, finely grated
|
|
1 tbsp fresh chives, finely chopped |

| Method | | Heat oil in a saucepan over medium heat. Add caraway seeds and onion. Cook until onion is soft. Add garlic and cook until aromatic. Add celeriac, stock and milk. Bring to a simmer over medium heat. Reduce heat to low and cook partially covered for 20 minutes until the celeriac is tender. Add broccoli and cook for another 15 minutes till it is tender. Pour the mixture in a blender and process until smooth. Season with salt and pepper and serve in soup mugs topped with chives and parmesan. |
