| Ingredients |

1 cup wholemeal self-raising flour
|

1 cup self-raising flour

1 cup rolled oats
|
|
1 cup chopped dried apricots
|
|
1/2 cup firmly packed brown sugar
|
|
1 1/3 cups skim milk
|
|
2 eggs
|
|
2 tbsp olive oil
|
|
1 tsp vanilla essence
|
|
1/2 cup flaked almonds |

| Method | | Preheat oven to 180oC. Line twelve 1/2 cup capacity muffin pans with paper cases. Sift the flours into a large bowl. Add oats, sugar and apricot. Stir to combine. Make make a well in the centre. Whisk together the eggs, milk, oil and vanilla in a large jug. Pour into the flour mixture and use a metal spoon to stir until just combined. Spoon the mixture into the lined muffin pans filling each to 2/3rd capacity. Sprinkle flaked almonds over the muffins. Bake in oven for 20 minutes until golden brown and cooked through. Transfer to a wire rack to cool. |
