Apricot Oat Muffins

These muffins are a great source of magnesium, ideal for little tummies and a perfect breakfast food.
 
Preparation Time: 10 mins
Cooking Time: 25 mins
Makes 12 pieces
  Egg  Vegetarian
Ingredients
   1 cup wholemeal self-raising flour
   1 cup self-raising flour
   1 cup rolled oats
   1 cup chopped dried apricots
   1/2 cup firmly packed brown sugar
   1 1/3 cups skim milk
   2 eggs
   2 tbsp olive oil
   1 tsp vanilla essence
   1/2 cup flaked almonds
Method
Preheat oven to 180oC. Line twelve 1/2 cup capacity muffin pans with paper cases. Sift the flours into a large bowl. Add oats, sugar and apricot. Stir to combine. Make make a well in the centre. Whisk together the eggs, milk, oil and vanilla in a large jug. Pour into the flour mixture and use a metal spoon to stir until just combined. Spoon the mixture into the lined muffin pans filling each to 2/3rd capacity. Sprinkle flaked almonds over the muffins. Bake in oven for 20 minutes until golden brown and cooked through. Transfer to a wire rack to cool.
