Orange, Red Onion & Mint Salad

Preparation Time: 10 mins
Serves 3
  Vegetarian  From My Recipe Book
Ingredients
   3 navel oranges, peeled
   1/2 red onion, peeled, thinly sliced
   1/4 cup fresh mint leaves
   2 tbsp extra virgin olive oil
   salt to taste
   freshly ground black pepper
Method
Remove the white pith from the oranges. Cut the oranges into thin slices and arrange overlapping on a large serving plate. Scatter over the onions and mint leaves. Drizzle extra virgin olive oil. Season with salt and pepper and serve.
