| I have to try this earthy recipe from the country. Anything with pecans in it and baked to perfection, has to be good for you!! Even more perfect served with a dollop of cream. |

| Ingredients |
|
2 1/2 cups self-raising flour
|
|
1 3/4 cups dark brown sugar
|
|
150g cold butter, chopped
|
|
125g pecans, finely chopped
|
|
1/3 cup milk
|
|
1/2 cup sour cream
|
|
2 eggs
|
|
1/3 cup dessicated coconut
|
|
finely grated rind of 1 orange
|
|
1 tsp mixed spice
|
|
2 tsp ground nutmeg
|
|
1/4 tsp bicarbonate of soda |

| Method |
Heat the oven to a moderate 180oC. Grease a 20 X 30 cm slice pan. Line the base and two longest sides with a sheet of baking paper. Combine the flour, spices, sugar and butter in a food processor. Mix until very fine and transfer to a large bowl. Spoon half the mixture into the prepared pan and press firmly into the base.
Make a well in the centre of the remaining mixture in the bowl. Add pecans, orange rind, coconut and bicarbonate of soda. Mix well. Add the eggs, milk and sour cream. Stir until moist. Pour the mixture over the base in the pan and smooth the surface. Bake for 45 minutes until just firm to touch in the centre. Cool cake completely in the pan. Lift out using the overhanging baking paper. Cut into squares. |
