| Cheese & Cherry Tomato Pudding |

| A nice, little savoury pudding for fussy babies who don't like to chew. |

| Ingredients |

2 slices wholemeal bread
|
|
65g cheddar cheese
|
|
1/2 onion, finely chopped
|
|
6 cherry tomatoes cut in half
|
|
2 eggs
|
|
175ml milk
|
|
dash of mustard powder
|
|
1/2 tsp dried basil
|
|

| Method | | Preheat oven at 180oC. Spread bread with butter and cut each slice into nine cubes. Grease a small ovenproof dish. Scatter half the bread cubes over the base of the dish and sprinkle over half the cheese, half the onion and half the tomato. Repeat the layers reserving little cheese for the top. Beat together eggs, milk and mustard. Pour over the bread cubes. Top with remaining grated cheese and bake in the oven for around 30 minutes until golden. Cool a bit and serve. |
