Cardamom And Ginger Slice

This is a very aromatic and full bodied slice, a great way to end an Indian or Moroccan Feast. Serve it with spiced "chai".
 
Prep & Cooking Time: 50 mins
Makes 18 pieces
  Vegetarian
Ingredients
For The Slice
   2 tsp cardamom seeds
   1/4 cup preserved ginger, chopped
   1 1/4 cups plain flour
   1/3 cup self-raising flour
   1/2 cup caster sugar
   160 butter, chopped
   finely grated rind of 1 lemon
For The Icing
   80g butter
   2 tbsp golden syrup
   1/4 cup lemon juice
   2 cups icing sugar mixture
   3-4 tsp ground ginger
To Make The Base
Heat oven to moderate 180oC. Grease a 20cm X 30cm lamington tin, then line the base and two longest sides with a single piece of baking paper. Place the cardamom seeds in a mortar and pestle. gently pound to finely crush the seeds and release the aroma.

Combine the flours, sugar and butter in a food processor. Add the cardamom seeds, lemon rind and ginger. Process until the mixture just begins to stick together. Press the mixture into the base of the prepared tin and smooth the surface. Bake for 25-30 minutes until golden. Remove from oven and cool completely in the tin.

To Make The Icing
Melt butter, golden syrup and lemon juice in a saucepan. Add icing sugar mixture and ground ginger. Stir with a wooden spoon until smooth. Spread the icing over the cooled slice and leave to set completely. When icing is set, lift from the tin using the overhanging baking paper and cut into squares.
