| Typically Mexican, this green, herby vinaigrette can add a kick to your summer salads. |

| Ingredients |
|
1/2 cup fresh coriander leaves, finely chopped
|
|
3 spring onions, finely sliced
|
|
2 tbsp dry oregano
|
|
6 tbsp dry white wine
|
|
6 tbsp vinegar
|
|
3 tbsp lemon juice
|
|
3/4 cup olive oil
|
|
salt to taste
|
|
freshly ground black pepper |

| Method | | In a small bowl, whisk the vinegar, lemon juice, salt and pepper. Gradually whisk in the oil in a steady stream until the dressing is blended and thickened. Add coriander leaves, spring onions, oregano and white wine. Stir to mix well. |
