| This is the classic and most basic version of salad dressings. This recipe can be used by itself or as a base for more elaborate and flavourful dressings. |

| Ingredients |

6 tbsp vinegar
|
|
3 tbsp lemon juice
|
|
3/4 cup extra virgin olive oil
|
|
salt to taste
|

freshly ground black pepper |

| Method | | In a small bowl, whisk the vinegar, lemon juice, alt and pepper. Gradually whisk in the oil in a steady stream until the vinaigrette is blended and thickened. |
