1 avocado
|
|
2 medium ripe bananas, mashed
|
|
2 eggs, beaten
|
|
300g plain flour
|
|
250g light muscovado sugar
|
|
175g butter
|
|
2 tsp baking powder
|
|
100g pecans, roughly chopped |

| Method |
Preheat oven to 190oC. Line the base of a 1kg loaf tin with baking paper and grease the sides of the tin. Quarter the avocado and remove the stone. Peel the skin and chop avocado finely. Mix together butter and sugar in a bowl until light and fluffy. Stir in the eggs, bananas, chopped avocado and pecans. Sieve the flour and baking powder over the wet mixture and gently fold in with a metal spoon. Pour into loaf tin and smooth over the surface with a flat spatula or knife.
Arrange some whole pecans on top and sprinkle with some muscovado sugar. Bake in the oven for 1 hour 15 minutes. Cool in the tin for 15 minutes before turning onto a wire rack to cool completely. |
