| Simple Sausage Rolls |

| These rolls are not only quick to make, they can also be assembled ahead and frozen. Then when you are ready to eat, just pop them in the oven for 20 mins and presto!! I like to make them from really spicy and herb-flavoured sausages. |

| Ingredients |
|
1 kg spicy sausage mince
|
|
2 cups fresh breadcrumbs
|
|
2 eggs
|
|
1/3 cup worcestershire sauce
|
|
2 tbsp tomato sauce
|
|
4 sheets frozen puff pastry, thawed
|
|
2 egg yolks for glazing, lightly beaten
|
|
a sprinkling of sesame seeds
|
|
salt to taste
|
|
freshly ground black pepper |

| Method |
Preheat the oven to 200oC. Combine the sausage mince, breadcrumbs, eggs, worcestershire sauce, tomato paste, salt and pepper in a large bowl and mix well. Cut each pastry sheet in half. Divide the sause mixture into 8 equal portions. Roll each portion into a sausage shape and place in the centre of each portion. Roll to enclose, with the pastry seam underneath.
Cut the sausage rolls into desired lengths and place on a baking tray. Brush with egg yolk, sprinkle with sesame seeds and bake for 20-25 minutes until golden and cooked through. |
