| This is an ooey-gooey, buttery fudge with a nice crunch. Alter the nuts and make new variations everytime. No baking required! |

| Ingredients |

2 3/4 cups cream
|
|
125g butter
|
|
1 cup caster sugar
|
|
2 tbsp golden syrup
|
|
1/2 cup pecans, finely chopped |

| Method | | Simmer cream rapidly in a saucepan over medium heat for 15-20 minutes until reduced by half. Add butter, sugar and golden syrup. Stir constantly until the caramel mixture is golden and thick. Add pecans and pour into a 16cm square tin lined with baking paper. Refrigerate for 2 hours until set. Cut into even squares. |
