Spring Strawberry Muffins

Sweet and Tart is an apt way to describe these heavenly little cakes. My fussy 2-year old who will not touch anything bread based took one bite and said "More Cake?" ... ahhh music to my ears!!
 
Preparation Time: 15 mins
Cooking Time: 30 mins
Makes 18 pieces
  Vegetarian  Egg  From My Recipe Book
Ingredients
   3 cups plain flour
   1/2 cup granulated sugar
   1/2 cup brown sugar
   1 tbsp baking powder
   1 1/2 cups strawberries, chopped fine
   3 eggs
   1 cup milk
   125g butter, melted and cooled
   a pinch of salt
Method



Preheat oven to 200oC. Combine sifted flour, sugar, brown sugar and baking powder in a large bowl and mix well. In a separate bowl, mix together butter, eggs and milk. Add wet mixture to dry mixture, mix lightly. Fold in the strawberries very gently. Grease or line 3 muffin trays of 6 muffin capaciy each with patty cases. Spoon batter into each patty case till 2/3rds full. Bake for 25-30 minutes until well risen and golden.

Serving suggestions
  • Serve hot dusted with icing sugar and a sprinkling of cinnamon or cold, sliced and buttered.
  • Alternatively serve cool muffins topped with fresh strawberries and whipped cream as a refreshing spring/summer dessert.
