| This makes a great buttery base for kid's birthday cakes. Dress it up with some delicious homemade buttercream, pop on some cake ornaments and you have a show stealer at the party! This recipe makes one big or 2 medium sized cakes and can feed 15-20 people. |

3 cups cake flour, sifted
|
|
2 1/2 tsp baking powder
|
|
1/2 tsp salt
|
|
1 3/4 cups sugar
|
|
2/3 cup butter, softened
|
|
1 1/4 cups milk
|
|
2 large eggs
|
|
2 tsp vanilla extract |

| Method | | Preheat oven to 180oC. Grease the bottom of two 8" round cake pans and line them with baking paper. Sift together cake flour, salt and baking powder. Cream sugar and butter until they are light and fluffy. Add eggs and vanilla extract to creamed mixture and beat well. Fold in the flour, add milk and mix well. Pour in prepared pans. Bake for 30-35minutes. Cool in the pans for 10 minutes. Remove and turn over onto wire racks and cool completely. |
