| After years of searching and experimenting, this cake happened!! I swear by this carrot cake recipe, it is the most scrumptious, delectably moist cake I have ever eaten. Tastes even better with a dollop of cream cheese frosting on top. |

| Ingredients |
|
3 cups carrot, finely grated
|
|
1/2 cup brown sugar
|
|
2 eggs
|
|
3/4 cup caster sugar
|
|
1/4 cup vegetable oil
|
|
1/4 cup applesauce
|
|
1/2 cup crushed pineapple, drained
|
|
1 1/2 cups plain flour
|
|
3/4 tsp baking soda
|
|
1/2 tsp salt
|
|
1 tsp vanilla extract
|
|
1 tsp ground cinnamon
|
|
1/2 cup chopped pecans
|
|
1 tsp ground nutmeg |

| Method |
Combine carrots and brown sugar in a bowl. Set aside for 1 hour. Preheat oven to 175oC. Grease and flour a 10" round cake pan.
In a large bowl, beat eggs until light. Gradually beat in white sugar, oil and vanilla extract. Stir in pineapple. Sift together and combine flour, baking soda, salt, cinnamon and nutmeg in a bowl. Add to wet mixture and stir until well combined. Stir in carrot mixture and pecans. Pour into prepared pan and bake for 50 minutes until cooked through. Cool in the pan for 10 minutes. Remove from pan and cool on a wire rack. |
