| Quick Mango Souffle |

| One of my friends whips this fast dessert up within minutes. I on the other hand managed to make a complete mess of it the first time around. A word to the wise .. be very careful with the gelatine, the rest is easy peasy! |

| Ingredients |

225g mango pulp [alphonso]
|
|
125g icing sugar
|
|
100g double cream
|
|
2 egg whites
|
|
2 tsp gelatine |
|

| Method | | Melt the gelatine in a little warm water [2 tbsp] and set aside to cool. Beat the egg whites with an electric mixer till they are stiff and form soft peaks. Set aside. Combine the mango pulp and sugar in a large bowl. Mix well till sugar melts completely. Add the gelatine mixture and stir briskly. Add 1 tablespoon of the cream and mix well. Gently fold in the egg whites into the mango mixture. Pour into a chilled deep dish and place in the freezer for about half an hour till it starts to set. Remove from the freezer and chill in the coolest part of the fridge until ready to serve. |
