| This is a tangy little relish made from the 'Ambakalia' variety of mangoes hailing from the Indian subcontinent. Use it as a marinade, layer it on your sandwiches or just grab a hefty spoonful if your curry is too fiery. |

| Ingredients |

10 small green mangoes [ambakalia]
|
|
1 cup jaggery
|
|
1/2 cup white onion, finely chopped
|
|
6 cloves
|
|
1 tsp ground cinnamon
|
|
3 cups water |
|
|
| Method | | Peel the mangoes and cut in half lengthwise. Remove and discard the tender seeds. Heat water in a medium saucepan on medium-high heat. Add the jaggery, onions, cloves and cinnamon. Cook until jaggery is melted and onion softened. Reduce heat and add the mangoes. Cook on low flame, stirring ocassionally till a syrupy consistency is reached. Remove from heat and cool. |
