| This is a gorgeous, rich looking, golden coloured "mithai" perfect for Diwali/Deepavali, the Indian Festival Of Lights. It smells absolutely fantastic and fragrant too. It is time consuming but well worth the effort. |

| Ingredients |
|
300g moong dal [split yellow lentils]
|
|
300g sugar
|
|
3 1/2 cups water
|
|
few saffron strands soaked in 1 tbsp of milk
|
|
200g ghee
|
|
2 tbsp of assorted nuts, coarsely crushed [pistachio,almon,cashewnut] |

| Method |
Soak dal for 3 hours with enough water to just cover it. Grind to a coarse paste and set aside. Boil water and sugar till it becomes syrupy and achieves a one-string consistency [similar to jam]. Add the dissolved saffron to it. Set aside.
Heat the ghee in a wide pan and cook the dal paste alongwith the assortment of nuts on low heat, stirring constantly till it reaches a reddish hue and leaves the sides of the pan. Pour in the sugar syrup and mix well.
Grease a large tray and spread the cooked 'mithai' [sweet] in it. Press and level with a flat spatula. When set, cut into neat squares and serve. |
