To peel a pumpkin, use a large chef's knife, insert the blade into the top of the pumpkin at the stem. Push downwards cutting along the pumpkin's natural ridge to the bottom. Repeat till you have smaller segments that can be peeled with a vegetable peeler.

| What a beauty this turned out to be? I had leftover Tofu And Prawn Curry. I was making Roasted Peanuts Thai Fried Rice and wanted a fresh Thai Salad to go with it. A medley of flavours gave this salad a lovely zing and the spice was just right. |

| Ingredients |

2 cups green raw papaya, peeled and shredded
|

1/2 cup green raw mango, shredded
|
|
3 small red chillies, deseeded and julienned
|
|
2 garlic cloves
|
|
1/2 cup roasted peanuts, crushed
|
|
2 tbsp fish sauce
|
|
2 tbsp sugar
|
|
2 tbsp lemon juice
|
|
1/2 cup freshly coriander leaves, chopped |

| Method | | In a small bowl combine the fish sauce and sugar. Set aside till the sugar melts and mixes with the fish sauce. Place the garlic cloves in a mortar and bash them well with the pestle. Add the fish sauce and sugar mixture, bashing gently. Add the papaya, chillies and peanuts, bashing lightly so as to just bruise the papaya and not make it mushy. Remove this mixture to a serving bowl. Add the green mango, lemon juice and coriander leaves. Toss lightly with a fork and serve. |
