Buttery Lime Cupcakes

These little cupcakes are oh so lemony and refreshing. I feel they taste even better after chilling!
 
Preparation Time: 10 mins
Cooking Time: 35 mins
Makes 6 pieces
  Vegetarian  Egg  From My Recipe Book
Ingredients
For The Cake
   1 1/2 cups plain flour, sifted
   2 tsp baking powder
   3 eggs
   3/4 cup caster sugar
   1 tbsp lime rind, finely grated
   200g unsalted butter, softened
For The Icing
   1/4 cup lime juice
   3/4 cup sugar
To Make The Cake
Preheat the oven to 160oC [325oF]. Combine butter, sugar and lime rind in a large bowl and beat until light and creamy. Add the eggs and beat well. Fold through the flour and baking powder. Spoon the mixture into 6 muffin cases, each of 1-cup capacity. Bake for 35 minutes until cooked through and golden on top.
To Make The Icing
Combine the sugar and lime juice and stir briskly with a fork for 2 minutes. Pour over cooled cupcakes.
Serving suggestions
  • Chill the cupcakes in the fridge for an hour, serve with a dollop of whipped cream.
