| Poha Bake [Flattened Rice Flake Bake] |

| 'Poha' or 'Pauva' is used to make a delightful array of snacks along India's West Coast, the most popular being 'Batata Pohe' aka 'Bataka Pauva', a savoury pilaf-style dish consisting of potatoes and flattened rice flakes. In 'Poha Bake', we give the traditional classic a modern twist and end up with a yummy finger food. |

| Ingredients |

2 cups poha [thick flattened rice flakes]
|
|
1 green chilli, chopped fine
|
|
1 small onion, chopped fine
|
|
1 small potato, peeled and diced
|
|
1 tbsp fine semolina soaked in 2 tbsp of water
|
|
6 tbsp low-fat yoghurt
|
|
2 tsp lemon juice
|
|
2 tsp sugar
|
|
1 tsp coriander powder
|
|
1/4 tsp turmeric powder
|
|
salt to taste
|
|
1/2 cup fresh coriander leaves, chopped
|
|
1 tsp mustard seeds
|
|
oil for spraying and greasing |

| Method |
Preheat oven to 200oC. Grease a 9X23cm baking dish and set aside.
Wash the poha under running water in a colander for a few seconds, till they are thoroughly rinsed and soaked. Drain water and transfer poha to a large mixing bowl. Add all the remaining ingredients and mix well. Spread mixture in the prepared baking dish. Press it and even the top with a flat spatula. Spray some cooking oil, scatter some mustard seeds and bake for approximately 15 minutes till cooked through.
Remove from the oven, cut into pieces and serve hot with coriander chutney. |
