| Miso Soup With Mushrooms And Tofu |

| I recently had the pleasure of sampling a very flavourful Japanese dish called 'Katsu-Don' and the Miso soup that came with it was very satisfying. I have dug up a slight variation to the soup I had, this one with mushrooms and tofu can also be served as a main. You won't believe that it cooks in under 10 minutes. |

| Ingredients |
|
2 tbsp yellow miso paste
|
|
4 cups water
|
|
1 tbsp soy sauce
|
|
100g firm tofu, cubed
|
|
75g shiitake mushrooms, sliced
|
|
4 matchstick pieces of ginger
|
|
2 spring onions, sliced |

| Method | | Combine miso paste, soy sauce, water and ginger in a saucepan and simmer for 4 minutes over medium heat. Add mushrooms, tofu and spring onions. Cook for a few minutes until the mushrooms are soft. |

| Serve hot topped with chopped garlic chives and a sprinkling of black pepper. |
