| Masoor Ka Shorba [Lentil Soup With Yoghurt] |

| A shorba is an Indian soup, often spiked with either cream or yoghurt. This Masoor Shorba is extremely rich in iron and protein and would make a great entree' for an Indian meal. |

| Ingredients |
|
1 cup masoor dal [split red lentils]
|
|
3 onions, sliced
|
|
3 tomatoes, chopped
|
|
1/2 cup spinach leaves, chopped
|
|
4 garlic cloves, crushed
|
|
1/2 cup yoghurt
|
|
3 tsp curry powder
|
|
1/2 tsp red chilli powder
|
|
1 tsp ghee
|
|
salt to taste |

| Method | | Heat ghee in a saucepan and fry the onions on medium heat, stirring constantly till they soften. Add crushed garlic and spices. Fry for a few seconds. Add water, tomatoes and masoor dal. Cover and cook on high for 30 minutes. When the dal is completely cooked and soft, remove from heat and blend with a hand blender. Return to heat and add salt and spinach. Simmer on low heat for 10 minutes. Stir in the yoghurt and mix well. |
