Masoor Ka Shorba [Lentil Soup With Yoghurt]

A shorba is an Indian soup, often spiked with either cream or yoghurt. This Masoor Shorba is extremely rich in iron and protein and would make a great entree' for an Indian meal.
 
Prep & Cooking Time: 45 mins
Serves 4
  Vegetarian  From My Recipe Book
Ingredients
   1 cup masoor dal [split red lentils]
   3 onions, sliced
   3 tomatoes, chopped
   1/2 cup spinach leaves, chopped
   4 garlic cloves, crushed
   1/2 cup yoghurt
   3 tsp curry powder
   1/2 tsp red chilli powder
   1 tsp ghee
   salt to taste
Method
Heat ghee in a saucepan and fry the onions on medium heat, stirring constantly till they soften. Add crushed garlic and spices. Fry for a few seconds. Add water, tomatoes and masoor dal. Cover and cook on high for 30 minutes. When the dal is completely cooked and soft, remove from heat and blend with a hand blender. Return to heat and add salt and spinach. Simmer on low heat for 10 minutes. Stir in the yoghurt and mix well.
Serving suggestions
  • Serve hot garnished with coriander leaves and lemon slices.
