| "Chola Gobi" is an interesting twist to the more traditional and world famous "Aloo Gobi". This is an extremely fast recipe that I devised when I was pressed for time and now use it wisely on a short notice. I just make sure that I have all the ingredients handy at all times, and I can have this ready in under 20 minutes when I need a miracle. |

| Ingredients |

1 can chickpeas, rinsed and drained
|
|
2 cups cauliflower florets
|
|
2 tomatoes, diced
|
|
1 onion, finely chopped
|
|
2 garlic cloves, crushed
|
|
2 green chillies, finely chopped
|
|
2-3 bay leaves
|
|
1/2 tsp turmeric powder
|
|
1 tsp red chilli powder
|
|
1 tsp coriander powder
|
|
1 tsp garam masala
|
|
salt to taste
|

2 tbsp oil
|
|
1/2 cup freshly chopped coriander leaves |

| Method | | Heat oil in a deep frying pan over medium heat. Add the bay leaves, garlic, onions and tomatoes. Cook for 2-3 minutes, stirring occasionally. Add all the spices, chickpeas and cauliflower. Stir well to combine. Reduce heat to medium-low, cover with a vented lid and let simmer for 15-20 minutes. Garnish with coriander leaves and serve with parathas or naan. |

| I like to add 1 tsp of sugar and garnish it with chopped mint leaves. I also try to substitute the garam masala with "chole masala" whenever I can. | |
