| Orange And Almond Babycakes |

| Ingredients |

1 large orange, rind finely grated, juiced
|
|
125g butter, softened
|
|
3/4 cup almond meal
|
|
2/3 cup caster sugar
|
|
2 large eggs
|
|
1 cup self-raising flour |

| Method | | Preheat oven to 180oC. Grease two 12-hole mini-muffin pans. Using an electric hand beater, beat butter, sugar and orange rind for 5 minutes until light and creamy. Add eggs one at a time beating well after each addition. Sift flour over butter mixture. Add almond meal and 1/4 cup orange juice. Gently fold to combine. Fill each muffin-hole upto three-quarters full. Bake for 15-20 minutes until golden and cooked through. Cool cakes in the pan for 5 minutes. Turn them onto a wire rack and cool completely. |
