| The marriage of garlic and chicken was indeed made in heaven. The combination of these two ingredients is pure genius, each bringing out the flavour of the other. Throw in some lemon juice and black pepper and you have an instant winner. |

| Ingredients |
|
1 kg chicken thigh fillets, trimmed, cut into 2 cm pieces
|
|
4 garlic cloves
|
|
1/4 cup brown sugar
|
|
1 large lemon, juiced
|
|
1 tbsp black pepper
|
|
1 cup coriander leaves, roughly chopped
|
|
1 cucumber, halves, deseeded, cut into long strips |

| Method | | Place garlic, chicken, sugar, pepper and 1/4 cup lemon juice in a glass bowl. Season with salt. Toss to combine. Cover and refrigerate for 1 hour. Stir in chopped coriander. Heat a non-stick frying pan over medium heat. Cook chicken in batches stirring occasionally for 5 minutes until cooked through. |
