| Ingredients |

1/4 cup golden syrup
|
|
1/4 cup brown sugar
|
|
1 tbsp ground ginger
|
|
1 tsp ground cinnamon
|
|
1/2 tsp ground cloves
|
|
1 tsp bicarbonate of soda
|
|
125g unsalted butter, chopped
|
|
1 egg, lightly beaten
|
|
2 1/4 cups plain flour, sifted
|
|
currants, m&m's, cachous, soft icing for decorating
|
|
icing sugar for sprinkling |

| Method |
Preheat oven to 160oC. Grease and line baking trays. Combine golden syrup, sugar, ginger, cinnamon and cloves in a heatproof bowl. Place over a saucepan of simmering water. Stir until dissolved. Add bicarbonate of soda.
Add butter and golden syrup to the bowl. Stir until butter has melted and mixture is smooth. Cool. Add egg and 1 cup flour. Mix well. Add remaining flour and knead gently bringing the dough together using your hands. Knead until dough is soft and smooth. Roll dough between 2 sheets of baking paper to 5 mm thickness. Using a 12 cm gingerbread cutter, cut out 15 shapes. Place on baking trays. Place currants for eyes, cherry slivers for mouth and m&m's for buttons. Bake for 10-15 minutes until firm and lightly browned. Cool completely on wire racks and decorate with icing. |
