| Passionfruit Crumble Slice |

| An interesting twist to the old-fashioned apple crumble, this one has neither apple nor anything old-fashioned in it. It is modern, tangy and bursting with flavour. |

| Ingredients |

3 cups plain flour
|
|
3/4 cup caster sugar
|
|
150g butter, chilled, chopped
|
|
1 egg
|
|
1 tsp vanilla essence
|
|
3 cups passionfruit curd
|
|
1 tbsp icing sugar |

| Method | | Preheat oven to 180oC. Grease a 3cm deep, 24cm x 29.5cm slice pan with non-stick baking paper that is overhanging the edges. Place flour, sugar and butter in a food processor. Process until mixture resembles breadcrumbs. Add egg, vanilla nd 2 1/2 tablespoons cold water. Process until mixture comes together, adding more water if necessary. Reserve 1 cup pastry. Press remaining pastry into the base of the pan. Bake for 25 minutes until golden. Spread passionfruit curd over warm base. Crumble remaining pastry over curd. Bake for 15-20 minutes until top is golden. Set aside to cool completely. Dust with icing sugar. Cut into square pieces and serve. |
